Ingredients

red bell peppers.
1
eggplant.
2
garlic cloves.

tbsp
white vinegar.
(Optional)

olive or sunflower oil.

teaspoon
salt.
(To taste).
Black pepper.
(To taste).
Instructions
Bake the bell peppers and the eggplant for about 1hr at 180°.

Optionally you can wrap them.
Let them cold.
Peel the bell peppers.
Remove the flesh of the eggplant with a spoon.
Strain the peppers to avoid water excess
Finely chop the garlic and add it to the mixture.
Blend everything a bit.
Add the oil, salt and pepper.
Blend everything until the desired consistency is achieved.

(*)
You can wrap the bell peppers with tin foil or cook them in a dish in the oven.
If you have the option of cooking them on a grill, even better.
You can also cook them on the grill or as you prefer.
