Cut the broccoli branches, removing as much of the trunk as possible.

Dredge the croquette in flour and shape it.
Put the croquettes in the freezer for approximately 10 minutes. Do not freeze them, the idea is that they take a firmer consistency so that they do not fall apart when frying.
Heat a mixture of sunflower oil and olive oil to 200 degrees Celsius.

Fry the croquettes for two or three minutes until golden brown.
