Marinate the chicken cut into medium cubes (1 bite) with the tomato paste, garlic, olive oil and seasonings.
Chicken thighs in small pieces (For a bite)., Garlic., Ras el hanout, Garam masala, Sweet paprika., Salt., Olive oil., Tomato paste.
Cover the couscous with twice its volume of broth (1 couscous + 1 broth) and let it rest for 10 to 15 minutes.
Couscous., Vegetables broth.
Cut the carrots, zucchini and bell peppers into medium sticks.
Red and yellow bell pepper., Carrot., Zucchini.
Cut the onion into julienne strips.
Red onion.
Boil the carrots and baby corn for 1 or 2 minutes so that they soften a bit, depending on the thickness with which we cut them, and set aside. (Important: They have to be crispy, not soft).
Baby corn.
Sauté the onion for 1 minute and add the marinated chicken and its sauce.
Cook over medium/high heat until the chicken is almost cooked. Approximately 5 or 6 minutes.
Add the bell peppers and cook 1 more minute.
Add the carrots and baby corn and cook for 1 or two minutes.
Finally add the zucchini and cook 1 more minute over low heat.
