Put the ingredients in a blender glass.
3 egss., 2 teaspoon pimentón de la vera., 2 teaspoon cayenne pepper., ½ teaspoon salt., 450 cl mix sunflower with olive oil.
With the hand blender resting on the bottom, start blending without moving it.
After a few seconds, when it begins to emulsify, move from top to bottom slowly until it emulsifies completely.
Add the mayonnaise to a pint siphon with one load and shake well.
