Instructions
Grate cucumber and add a pinch of salt. Let it rest for a few minutes to release all the juice.

Dressing:
Mix 4 tbsp extra virgin olive oil with ½ lime juice and ½ vinegar.
Add the clove of garlic processed as a puree.

Add the dressing to the yogurt and mix gently.
400 grams greek yogurt
If at this time the mixture is too liquid, pass it through a yogurt filter for a few hours until the whey drains and reaches the desired texture.
Add salt and black pepper to taste.

Drain the cucumber well with a ver clean kitchen towel or by hand to remove all the juice and add it. Mix gently.
Chop the dill not too small and add it. Gently mix.

Finally, it can be decorated with a little lime zest and dill.

Traditional recipe don't use lime juice. I use that because I like it more than vinegar.
