- 3 Egg yolks (Big)
- 400 grams butter.
- 1 teaspoon lemon juice.
- 1 slpash white whine.
- Salt.
- Black pepper.

Beat the yolks with the salt, pepper, lemon and wine until foamy.
Beat constantly without stopping while very gently adding the clarified butter until you achieve the desired texture.
