Dissolve the yeast in warm water and let rest 10 minutes covered.
10 grams dry yeast., 250 ml warm water.
Mix the flour, salt and sugar in a bowl.
500 grams flour., 1 tbsp salt., 1 tbsp sugar.
Add dissolved yeast and oil. Mix well. Add flour if necessary until the dough is not sticky. 125 ml olive oil.
Knead for 10 minutes until smooth and elastic.
Put in a floured bowl. Cover with a damp cloth. Let rise for 1 hour in a warm place until doubled in volume.
Smash with your fist. Extend and form a rectangle 2 cm thick. Moisten with water and roll lengthwise to form a cylinder.
Put on a baking sheet, cover with a damp cloth and let rise again for 1 hour.
Preheat oven to 180c.
Make diagonal cuts, 1 cm deep in the upper part of the dough. Moisten with water and sprinkle a little flour.
Bake in oven at 180c. for about 30 minutes.
Let rest in turned off oven for a couple of minutes more.
Let cool on rack.
