Sweet Soup

Sweet potato, butternut squash, carrot and coriander soup.

- 2 sweet potatoes.
- 3 carrots.
- 1 butternut squash.
- 2 Onions.
- Salt.
- Pink pepper. (Optional).
- Olive oil.
- 1 bunch coriander.
- Vegetables broth.
- Butter.
- 1 bunch thyme.
Cut the onions in cubes.
2 Onions.
Cut butternut squash in half lengthwise.
1 butternut squash.
Cut sweet potato in half.
2 sweet potatoes.
Cut the tip and tails of the carrots.
3 carrots.
Roast everything in the oven at 180° for 45 minutes with a little butter and thyme.
Butter., 1 bunch thyme.
Saute the onions for five minutes with a splash of olive oil.
Olive oil.
Add carrots, sweet potato and squash and cook for one minute more at medium heat.
Vegetables broth.
Add vegetable broth and cook for ten minutes.
Add coriander.
1 bunch coriander.
Blend the soup with a hand-blender until the desired consistency.
Strain the soup.
Enjoy!

- Optionally add pink pepper before adding the broth 🤤.
- You can also add a couple toasted butternut squash seeds.
- Don't add too much water before blend because later you are going to strain the soup. You can add more later after blending.
- A good option is to roast the vegetables on the grill with charcoal or firewood. It will have a smoky flavor. If you do not have that possibility or it is a lot of work you can add liquid smoke.
