Ingredients

leeks.

chicken broth.

double cream.

butter.

splash
olive oil.
Salt.
Pepper.
Instructions
Cut leeks in small pieces.
Cut potatoes in cubes.
Cut onion in cubes.
With olive oil and butter, saute the onion and leeks until soften and golden.
Add potatoes and saute for 10 minutes.
Add the chicken broth and cook for 10 minutes more.
Blend everything with a handblender until reach a creamy texture.
Strain the soup.
Add the cream and mix well.
