- 1 liter soy sauce
- 5 bunch green onions
- 1 tbsp ginger
- 100 ml sake
- 100 ml mirin
- 3 tbsp brown sugar
- 1 kg chicken thighs (35.27 oz) (With skin)
Yakitori Sauce: Make a reduction of soy sauce (it's better mixed with a splash of dark soy sauce) with green onion, ginger, garlic, a splash of Sake and Mirin, Sugar. Brown sugar is tastier. To do this simply boil all the components.When it has a thicker consistency, like a light syrup, you have it. There is not have an exact cooking point, it's at your preference. 1 liter soy sauce, 5 bunch green onions, 1 tbsp ginger, 100 ml sake, 100 ml mirin, 3 tbsp brown sugar
Once it is done, you have to strain it so that only the syrup remains and not the vegetables.
Skewers:The skewers are originally made with boneless chicken with skin thighs and they only have the trunks of the green onion. Optionally, you can put red peppers in some of them. 1 kg chicken thighs
Let the skewers marinate in the sauce for about 30 minutes before cooking. The best option is grill them on a barbeque but you can cook them in an oven. To do that it is important not to put them directly on the oven tray and to use a rack like a grill so that the cooking is more even. 1 kg chicken thighs
While you are marinating the skewers, preheat the oven at about 200°c (392°f) and cook the skewers for approximately 20 minutes, depending on the cooking point you prefer. Every three or four minutes paint them with a little brush with the sauce. 1 kg chicken thighs
A good idea if you make them on the grill is to add some special wood to the fire to perfume it. Optional you can keep a little pot with sauce to soak the skewers while eating them.That’s all. 1 kg chicken thighs
Yakitori is a Japanese skewered chicken, usually grilled over charcoal, marinade and painted with sauce during cooking. It literally means grilled chicken.
If you want, in some Asian market you can get Yakitori sauce and it’s cheap.
