Ingredients
  

  • 5 red bell peppers.
  • 1 eggplant.
  • 2 garlic cloves.
  • 1 tbsp white vinegar. (Optional)
  • 60 ml olive or sunflower oil.
  • 1 teaspoon salt. (To taste).
  • Black pepper. (To taste).

Instructions
 

  • Bake the bell peppers and the eggplant for about 1hr at 180°. (*)
    Optionally you can wrap them.
    Wrap and bake the peppers
  • Let them cold.

  • Peel the bell peppers.
    Peel the peppers
  • Remove the flesh of the eggplant with a spoon.
    Take off the flesh of the eggplant
  • Strain the peppers to avoid water excess
    Strain the vegetables
  • Finely chop the garlic and add it to the mixture.
    Add garlic
  • Blend everything a bit.
    Blend a little bit
  • Add the oil, salt and pepper.
    Add oil
  • Blend everything until the desired consistency is achieved.
    Blend the Ajvar
  • Enjoy!

Notes

  • (*) You can wrap the bell peppers with tin foil or cook them in a dish in the oven.
  • If you have the option of cooking them on a grill, even better.
  • You can also cook them on the grill or as you prefer.
