Argentinian Gramajo Scramble

Ingredients
  

  • 1 bunch scallions.
  • 6 shallots.
  • Potato chips.
  • ½ cup beans.
  • 1 bunch asparagus.
  • 6 eggs.
  • 100 grams ham.
  • 100 grams grated cheese.
  • Olive oil.
  • 2 tbsp butter.
  • Salt.
  • Pepper.

Instructions
 

  • Remove the tail of the asparagus and discard them.
    1 bunch asparagus.

  • Boil the asparagus for two minutes and reserve.

  • If the beans are fresh, boil them also for two minutes and reserve them. If they are frozen, simply defrost them with warm water and reserve.
    ½ cup beans.
  • Cut the scallions.

  • Cut the shallots in Julienne.

  • Cut the asparagus into small pieces.

  • Cut the ham into small pieces or strips.
    100 grams ham.

  • Add salt and pepper to the eggs and beat well.

  • In a deep pan, melt butter and add a little olive oil.

  • Sauté shallots and scallions for one minute.
    2 tbsp butter.

  • Add the fries and sauté a few minutes.

  • Add the ham and cook a few more minutes.

  • Add the asparagus and beans and cook two more minutes.

  • Add the grated cheese to the beaten eggs and mix well.

  • Add the beaten eggs and cook for a minute until the egg is set.

It is important to constantly stir each ingredient that is added, especially when adding the eggs.

The Gramajo scramble can have practically any ingredient you want.
The basics are some type of onions or similar, chips and eggs.
Afterwards you can use the vegetables or ingredients that you have left over from the day before that you may like.
This recipe is just one of many possible examples.

Try it with sweet potato chips! It's delicious.

A good option is to use thin fries. They integrate better with the egg and the other ingredients.
Fast food chains are good for that.
