Argentinian Gramajo Scramble
Don't throw away anything left over from yesterday.
Ingredients
- 1 bunch scallions.
- 6 shallots.
- Potato chips.
- ½ cup beans.
- 1 bunch asparagus.
- 6 eggs.
- 100 grams ham.
- 100 grams grated cheese.
- Olive oil.
- 2 tbsp butter.
- Salt.
- Pepper.
Instructions
- Remove the tail of the asparagus and discard them.1 bunch asparagus.
- Boil the asparagus for two minutes and reserve.1 bunch asparagus.
- If the beans are fresh, boil them also for two minutes and reserve them. If they are frozen, simply defrost them with warm water and reserve.½ cup beans.

- Cut the ham into small pieces or strips.100 grams ham.

- In a deep pan, melt butter and add a little olive oil.Olive oil.
- Sauté shallots and scallions for one minute.2 tbsp butter.
