Ingredients
  

  • Mini chicken fillets.
  • 3 cups flour.
  • 1 teaspoon baking powder.
  • ½ teaspoon salt.
  • ½ cup natural greek yogurt.
  • 1 warm water.
  • Sweet paprika.
  • Ginger powder.
  • Pink pepper.
  • Cheddar cheese in strings.

Instructions
 

  • For the dough, mix and knead the flour with the yogurt, the baking powder and the salt until you obtain a firm but soft dough. Optionally add a splash of oil.

  • Let rest for at least half an hour.

  • Roll out with a rolling pin and cut into circles.

  • Fry at 180° for a short time so that they are barely golden on the outside and soft on the inside. Otherwise they will break when opening them to reign them.

  • In the middle of frying, fold them in the middle and finish frying.

  • For the filling: In a bowl, put enough olive oil to marinate all the chicken and add the seasonings and salt.

  • Sauté the chicken with a little olive oil and salt until golden brown.

Notes

  • For the yogurt sauce in the video, use plain Greek yogurt, add dill, honey, juice of half a lime, black pepper, and salt.
    Mix well and store in the fridge.
  • For the coriander mayonnaise sauce you have this recipe here.
  • You can add string cheese or optionally melted.
    For the melted cheese sauce, simply heat the shredded cheese with heavy cream over low heat until melted, stirring slowly. If necessary, add a little more cream to achieve the desired texture.
  • The quantities of the dough are in relation to the number of desired chalupas. With these numbers they can obtain approximately 12 chalupas, also depending on their size.
