Cut the top of the zucchini and hollow it out.
Cut red onion into julienne or brunoise (your choice).
Sauté the onion in olive oil for two minutes, add the pork and cook until the meat is ready. About 10 minutes maximum depending on the power of your stove should be enough. During this time add salt, pepper and garlic.
Mix the shredded cheese with the meat and add a pinch of paprika (or sweet paprika).
Stuff the Zucchini.
Cover with the parmesan cheese to gratin.
Bake at about 180 degrees Celsius until the succhini are ready. This is only for cooking the zucchini since the filling is already pre-cooked.
To grill the cheese, turn the oven to maximum and cook for a couple more minutes.
