Spherifications with Agar Agar

AKA fake caviar.
Prep Time 10 minutes

Equipment

  • 1 precision scale.

Ingredients

  • 5 grams Agar Agar.
  • ½ liter liquid to spherify. (Drink, juice, etc).

Instructions

  • Boil the liquid to spherify and agar agar mixture for a few minutes until the agar agar has dissolved (1 gram each liter of the liquid to spherify), then remove it from the heat and let it cool until it is between 40°C and 45°C.
    Boil agar agar
  • With a syringe or a plastic bottle, pour small streams of the preparation into the oil.
The oil should be very cold, around 5-10°C (41-50°F). (if the oil is too cold, it can cause the pearls to become too hard and rubbery).
    Pour mix in oil
  • Leave the pearls for about a minute into the oil and check. (If you leave the pearls in the oil for too long, they may become too firm or rubbery).
    Keep in oil
  • Wash the pearls in clean and cold water once or twice.
    Wash the pearls
  • To give the "pearls" a nice color, and because I ate them with sushi, I soaked them in soya sauce.
    Soak the pearls
  • Enjoy!
