Irish Lamb Stew
Get in the St. Patrick's Day spirit with this traditional Irish Lamb Stew recipe!
Ingredients
- Lamb.
- Carrot.
- Celery.
- Leeks.
- Onion.
- Baby potatoes.
- Bay leaves.
- Rosemary.
- Beef Stock Cube.
- 2 can Guinness Stout or extra stout.
- Salt
- Black pepper.
- Flour.
- Perejil.
Instructions
- Cut the lamb into medium/large pieces.Lamb.
- Cut the vegetables into medium/large pieces.Carrot., Celery., Onion., Leeks.
- Snap the potatoes with a small knife. This way the potatoes absorb more broth and more flavor and will release more starch helping the sauce to thicken and take on a better texture.Baby potatoes.
- Salt and pepper the meat and flour it.Salt, Flour., Black pepper.
- Sauté the vegetables for a couple of minutes.
- Add the beef, a beef cube and cook a couple of minutes.Beef Stock Cube.
- Add the beer, bay leaf and a sprig of rosemary.Bay leaves., 2 can Guinness Stout or extra stout., Rosemary.
- Cook for 90/120 minutes over very low heat. During cooking check that the sauce does not reduce too much, maybe because the heat was too high.
- Add the potatoes and cook 30/40 more minutes until they are done and the sauce is reduced to a good point.
