Couscous Moroccan Style

Flavorful and easy meal.

Ingredients
  

  • Couscous.
  • Chicken thighs in small pieces (For a bite).
  • Red and yellow bell pepper.
  • Carrot.
  • Coriander.
  • Red onion.
  • Garlic.
  • Zucchini.
  • Baby corn.
  • Ras el hanout
  • Garam masala
  • Sweet paprika. (Mix with spicy if you want).
  • Salt.
  • Olive oil.
  • Tomato paste.
  • Vegetables broth.

Instructions
 

  • Marinate the chicken cut into medium cubes (1 bite) with the tomato paste, garlic, olive oil and seasonings.

    Marinate chicken
  • Cover the couscous with twice its volume of broth (1 couscous + 1 broth) and let it rest for 10 to 15 minutes.

  • Cut the carrots, zucchini and bell peppers into medium sticks.

  • Cut the onion into julienne strips.

  • Boil the carrots and baby corn for 1 or 2 minutes so that they soften a bit, depending on the thickness with which we cut them, and set aside. (Important: They have to be crispy, not soft).

  • Sauté the onion for 1 minute and add the marinated chicken and its sauce.

  • Cook over medium/high heat until the chicken is almost cooked. Approximately 5 or 6 minutes.

  • Add the bell peppers and cook 1 more minute.

  • Add the carrots and baby corn and cook for 1 or two minutes.

  • Finally add the zucchini and cook 1 more minute over low heat.

Notes

  • It is important that there is plenty of sauce so that the couscous does not remain dry.
  • Finish with coriander.
  • You can marinate with the seasonings of your choice.
