Bacon With Stout Beer Sauce

Ingredients
  

  • 1 kg bacon.
  • 2 white onions.
  • 2 red onions.
  • 1 leek.
  • 1 bunch cardamom seeds.
  • 1 clove garlic.
  • Olive oil.
  • 1 pint stout beer.
  • Thickener.
  • Black pepper.
  • Sweet paprika.
  • 1 cup mushrooms.
  • Asparagus. (To taste).

Instructions
 

  • Cut the onions and leek julienne.

  • Add olive oil and stir.

  • Add the bacon and cover it with black pepper and sweet paprika.

  • Cook over medium heat until the onion is cooked.

  • Add the beer and mix.

  • Once the beer comes to a boil, add the mushrooms and cook over medium/low heat for 15 minutes.

  • Dissolve a thickener in the same hot beer and strain it before adding it to avoid lumps. Mix well!

  • Cook a few more minutes.

  • When the meat is almost ready, add the asparagus and cook for another 5 to 8 minutes.

The bacon is already very salty. That's why no salt is added in this recipe.
