Fish and chips
Bear-Batter version.
Ingredients
- 320 grams plain flour.
- 1 pint bear.
- 5 grams salt.
- 1 teaspoon baking powder.
- 1 teaspoon paprika (Pimenton de la vera). (Optional).
- Cod filets. (Or the fish you prefer).
- Oil. (For frying).
Instructions
- Mix the flour, bear, salt, baking powder and paprika if you use, until get a smooth consistency like a double cream or just a little thicker.
- Let it rest half hour.
- Preheat the oil at 180°C (350°F).
- Dredge the fish in flour on both sides.
- Dip it in the mix (Batter) well covered.
- Let the excess of batter drip off and put it slowly in the oil.
- Cook just a few minutes.
- Enjoy!
Notes
Better use a thin filet. If you use a thick fillet you will have to lower the temperature of the oil so that it cooks well inside and the batter will be more oily.
Paprika is not traditional at all. I use it just because I love it. So you can use any spice you want like black pepper, turmeric or whatever.
