Foamed, Fluffy And Spicy Mayonnaise
With a siphon you will get a very light and lovely mayonnaise.
Equipment
- 1 Siphon. (With one or two charges).
Ingredients
- 3 egss.
- 2 teaspoon pimentón de la vera. (Sweet paprika).
- 2 teaspoon cayenne pepper.
- ½ teaspoon salt.
- 450 cl mix sunflower with olive oil.
Instructions
- Put the ingredients in a blender glass.3 egss., 2 teaspoon pimentón de la vera., 2 teaspoon cayenne pepper., ½ teaspoon salt., 450 cl mix sunflower with olive oil.
- With the hand blender resting on the bottom, start blending without moving it.
- After a few seconds, when it begins to emulsify, move from top to bottom slowly until it emulsifies completely.
- Add the mayonnaise to a pint siphon with one load and shake well.

Notes
- We need a very liquid mayonnaise. This depends not only on the amount of oil and eggs but also on the size of those eggs. If the consistency obtained is very thick, we can add a few drops of milk and blend again until we obtain the liquid consistency we are looking for. Otherwise we will not be able to foam the mayonnaise.
- Important: Before using, let it rest for half an hour in the fridge.
