Tabasco & Jalapeños Mayonnaise
Spicy homemade mayonnaise.
Equipment
- 1 hand blender
Ingredients
- Tabasco mild sauce. (To taste)
- 180/200 cl sunflower oil.
- 20 cl olive oil.
- 2 eggs.
- Salt.
- ½ lime juice.
- Jalapeño slices. (To taste).
Instructions
- Put all the ingredients, without breaking the egg yolk, in a vertical container where the hand blender fits.You can choose to use Jalapeño slices or Tabasco Sauce...or both if you like. The process is the same for both recipes.Tabasco mild sauce., 180/200 cl sunflower oil., 20 cl olive oil., 2 eggs., Salt., ½ lime juice., Jalapeño slices.
- Start processing with the hand blender resting on the bottom without moving it.
- After a few seconds when it begins to emulsify, gently move from top to bottom until you get the desired texture.

Notes
- If you like it spicier just add more tabasco sauce or more jalapeños
- If the mayonnaise is a bit runny or you prefer it thicker, simply add a few more drops of oil very slowly.
