Red Wine Pears
Poached in red wine. Super easy, fast, elegant, classy and delicious dessert.
Ingredients
- 4 Not very ripe pears.
- 1 Star anise.
- 1 Vanilla pod.
- 1 Cinnamon stick.
- 1 cup sugar.
- 500 ml Red wine. (Malbec goes very well).
- Cream.
- 1 orange peel.
- 1 lemon peel.
- A bit of ginger. (Optional).
Instructions
- Peel the pears.
- Simmer the pears over medium/low heat for approximately 20 minutes. with all the ingredients. If it boils too hard it could break the pears.
- Remove them and boil the wine over medium heat until it reduces and results in a thick caramel texture.
- Serve with cream, ice cream and the Malbec reduction sauce.

Notes
- Many people put cloves in it, but I pass.
- Cut the base of the pear so that it can be presented standing.
It is important that when you remove them they are soft on the outside but firm enough on the inside to be able to stand upright. This way they will absorb more wine but you will be able to present them standing up. - If you do not cover them completely with wine when cooking them, it is important to rotate them frequently with a rubber spoon so that they cook evenly but without breaking them.
