Ingredients
  

  • 1 kg meat (35.27 oz) (If it has bone you need more)
  • kg red onion (52.91 oz). (You can add Green onions, Shallots or any vegetable you want) *a*
  • 2 carrots
  • 2 cloves garlic
  • 1 bunch coriander
  • Garam Masala
  • Black pepper
  • Sweet Paprika (Pimentón de la Vera)
  • Salt
  • 75 cl white wine (a dry one is better)
  • 1 tbsp brown sugar
  • 1 pot beef stock (Optional, but it's nice)
  • 2 bay leaves
  • 1 tbsp cardamom pods
  • 75 ml olive oil (extra virgin)

Instructions
 

  • Cut Julienne red onion and mix with any other vegetable you want to use. Just cut them in medium/small pieces.You don’t need to peel the carrots, the peel is healthy. But it’s very important to clean them very good.
    1½ kg red onion, 2 carrots, 2 cloves garlic, 1 bunch coriander, 2 bay leaves, 1 tbsp cardamom pods

  • Mix everything with the stock pot, sugar and oil (Olive is better).
    1 tbsp brown sugar, 1 pot beef stock, 75 ml olive oil

  • Put the meat over the vegetables and add the condiments (Salt, black pepper, Paprika and Garam Masala). In this case the one I like the most is Garam Masala.

  • Start cooking over low heat for about two hours or two hours and half. The cook time depends on the size of the meat and the power of your stove. In the middle add the white wine and continue cooking. I use 2/6.

  • After two hours o two hours and half (depending the meet you are cooking) the meat becomes very soft. Remove it carefully.
    Serve with the desired side dish. Saffron rice is a good option.

Notes

This way you can cook any meat you want, pork or cow, but usually a slow cook one. 
(Every country has its own cuts. Ask your butcher)

Advice 1: Saffron rice is a good option for this meat.
Advice 2: Cook double portion and for the following day you have an incredible stew for noodles.
Options for  different sauces:
  1. Just remove the onions and any solid vegetable. You can add a thickener get a better texture of the sauce.
