Malbec Wine Reduction Sauce

Ingredients
  

  • 1 l malbec wine.
  • ½ l vegetable broth.
  • 1 bunch Scallions.
  • 1 clove garlic. (Optional).
  • 1 bunch pink pepper.
  • 1 tbsp thickener or agar agar. (Eg: Cornflour) (Optional).
  • 1 tbsp sugar.
  • 1 small piece ginger. (Optional).

Instructions
 

  • Boil the wine together with the broth and all ingredients until it reduces to a light thick texture.
    1 l malbec wine., ½ l vegetable broth., 1 bunch Scallions., 1 clove garlic., 1 bunch pink pepper.
    Boil malbec with vegetables
  • Once that texture is reached, let cool and strain into a container to serve later.
    Strain the sauce
  • You can also add a thickener such as a tablespoon of flour during the last minutes of reduction to achieve a thicker texture.
    1 tbsp thickener or agar agar.

  • This is a good thick texture. If you use for a decoration you would need a thicker texture.
  • Another option is to strain the preparation well and add agar agar, let cool and blend well with a hand blender.

Notes

Remember that when the sauce cools it gets thicker and even more so if you keep it in the fridge.
