Courgette Omelette
Easy, light and tasty.
Ingredients
- Bunch scallions
- 2 courgettes
- 5 eggs
Instructions
- Cut the scallions finely.Bunch scallions
- Cut the courgettes into thin semicircles.2 courgettes
- Beat the eggs with salt and black pepper.5 eggs
- Sauté the Scallions for no more than a minute over medium heat.
- Add the courgettes and sauté 1 more minute maximum.
- If necessary, discard the water released by the courgettes and return them to the fire.
- Add the beaten eggs and move the pan in circles so that they mix well with the courgettes.
- Cook over low heat until the bottom is ready and the top begins to set.
- Turn the tortilla over with the help of a plate and cook a few more minutes.

Notes
You can move the pan in circles to ensure the firmness of the omelette to know that it is cooked.
Courgettes can release some water even after cooking. Nothing happens, the water is simply discarded and that's it.
If you prefer to replace the scallions by shallots or onions, should be great too.
