Malbec Wine Reduction Sauce
Good for beef, chicken or pork.
Ingredients
- 1 l malbec wine.
- ½ l vegetable broth.
- 1 bunch Scallions.
- 1 clove garlic. (Optional).
- 1 bunch pink pepper.
- 1 tbsp thickener or agar agar. (Eg: Cornflour) (Optional).
- 1 tbsp sugar.
- 1 small piece ginger. (Optional).
Instructions
- Boil the wine together with the broth and all ingredients until it reduces to a light thick texture.1 l malbec wine., ½ l vegetable broth., 1 bunch Scallions., 1 clove garlic., 1 bunch pink pepper.
- Once that texture is reached, let cool and strain into a container to serve later.
- You can also add a thickener such as a tablespoon of flour during the last minutes of reduction to achieve a thicker texture.1 tbsp thickener or agar agar.
- This is a good thick texture. If you use for a decoration you would need a thicker texture.
- Another option is to strain the preparation well and add agar agar, let cool and blend well with a hand blender.
