Ingredients
  

  • Orzo.
  • Bell peppers.
  • Carrot.
  • Cinnamon stick.
  • Tomato paste.
  • Lamb.
  • Parmesan.
  • Crushed tomatoes.
  • Onion.
  • Garlic.
  • Red wine.
  • Herbs.
  • Bay leaves.
  • Olive oil.
  • Salt.
  • Black pepper.
  • Paprika. (Pimenton de la vera)
  • Meat broth.

Instructions
 

  • Cut onion, carrot and bell pepper into medium pieces.

  • Cut the lamb into medium cubes.

  • Sauté the bell pepper, onion and carrot for 2 or 3 minutes and set aside.

  • Seal the meat with a little olive oil.

  • Add the vegetables.

  • Add the wine and cook 2 or 3 more minutes. (*)

  • Add the tomato and tomato paste and mix well.

  • Add the garlic, cinnamon, bayleaves & herbs.

  • Cook for 2 or 3 hours over low heat.

  • Add the broth.

  • Add the Orzo and cook for approximately 20 minutes over medium heat or until the orzo is ready.

Notes

  • Serve with parmesan cheese and chopped parsley.
  • Orzo pasta is a type of pasta that is shaped like small grains of rice or barley. The word "orzo" in Italian means "barley," and the pasta resembles barley grains or rice, but it's made from durum wheat semolina, just like many other types of pasta.
  • (*)Preheat the wine so as not to interrupt the cooking.
  • To balance the acidity of the tomato you can add a little sugar or honey.
