Ingredients
  

  • Broccoli.
  • Sardo cheese.
  • Plain flour.
  • Egg.
  • Salt.
  • Black pepper.
  • Sunflower oil.
  • Olive oil.

  • Cut the broccoli branches, removing as much of the trunk as possible.

  • Blanch it boiling it for 2 or 3 minutes and put them in cold water to stop cooking.

  • Drain well to remove excess water.

  • Grate the Sardo cheese medium finely.

  • Chop the broccoli into small pieces with a knife. Do not blend it so as not to lose its texture.

  • Mix the broccoli with the cheese, the egg, the flour and a pinch of salt and black pepper.
    Add more flour if necessary until a medium firm and stable texture is achieved.

  • Dredge the croquette in flour and shape it.

  • Put the croquettes in the freezer for approximately 10 minutes. Do not freeze them, the idea is that they take a firmer consistency so that they do not fall apart when frying.
