Ingredients
  

  • 350 grams plain flour.
  • 4 tbsp sugar.
  • 3 teaspoon baking powder.
  • teaspoon teaspoon baking soda.
  • ½ teaspoon salt.
  • 1 big egg.
  • 500 ml milk.
  • 100 grams melted butter.
  • 1 or 2 teaspoons vanilla extract.

Instructions
 

  • First mix all the dry ingredients.

  • Add the milk, melted butter, egg and vanilla and mix well with a rubber spatula. Without beating. It is important that there are some small lumps.(*)

  • Let it rest for at least half an hour.

  • Moisten a pan with butter at medium heat and add a spoonful of the batter.

  • When you see bubbles on top it is probably ready to be turned over. You will notice that if you move the pan in circles quickly the pancake slides.
    With a spatula turn the pancake over and cook a few more minutes. The higher the pancake is, the lower the heat should be used so that it cooks evenly.

  • Top with fruits of your choice and some sauce. It can be maple syrup, golden syrup, honey or whatever you like. You can add some jam separately to taste.
  • Decorate with icing sugar and enjoy!

Notes

  • (*)If we beat the mixture too much we will produce more gluten and the dough will be less airy and less fluffy. These small lumps act as air containers that will leave small gaps in the dough.
  • The amounts of flour and milk can vary depending on several factors.
    It is therefore important to observe the texture of the mixture. It should be thick enough not to spread too much when put into the pan.
  • A good option is to use a small pan. This way all the pancakes will come out the same size, the size of the pan.Pancakes
