Patatas Bravas
Traditional Spanish Food commonly served as part of tapas.

Ingredients
- Potatoes.
- Tomatoes.
- 1 Big onion.
- 1 Egg.
- 200 cl sunflower oil.
- Olive oil.
- Sweet paprika.
- Cayenne pepper.
- Salt.
Instructions
- Sauce 1:Cut tomatoes into pieces and blend them.Tomatoes.
- Cut onions into medium cubes.1 Big onion.
- Sauté the onions in olive oil until golden brown.Olive oil.
- Add three teaspoons of sweet paprika and one of cayenne pepper. (If you want it more spicy add more cayenne).Sweet paprika., Cayenne pepper.
- Sauté 30 seconds more and add the blended tomato.
- Add salt.Salt.
- Let the tomato reduce until obtain a thick consistency.
- Blend everything for a few minutes.
- Sauce 2:In a mixing glass put a whole egg, sunflower oil, salt, two teaspoons of sweet paprika and a teaspoon of cayenne pepper.1 Egg., 200 cl sunflower oil., Sweet paprika., Cayenne pepper., Salt.
- Put the hand blender on the bottom of the glass and start blending without moving it.
- When the mayonnaise begins to emulsify, slowly move the hand blender up and down and then finish processing everything for a few more seconds.
- Potatoes:Boil the potatoes for a few minutes until they are just soft on the outside. Do not finish cooking them because they will finished when you fry them. The boiling time varies depending on the size of the potatoes.Potatoes.
- Cut the potatoes into medium cubes.
- In a frying pan mix sunflower oil and olive oil.200 cl sunflower oil., Olive oil.
- Fry the potatoes for just one or two minutes so that they brown on the outside but not much so that they absorb the sauce well later.

Notes
- In this case I used baby potatoes and left them with skin because I like them that way.
- Larger peeled potatoes are usually used. If you prefer this it is best to boil them with skin and peel them later.
- Quantities are to taste. If you like it more spicy you can use more cayenne.
