Pesto Genovese
Tasty and easy.
Ingredients
- 50 grams basil. (1.76 oz)
- ½ cup olive oil. (extra virgin).
- 70 grams Parmigiano Reggiano cheese. (2.46 oz).
- 30 grams Sardo Cheese. (1.05 oz)
- 1 clove garlic.
- 15 grams pine nuts. (o.52 oz).
- 1 pinch Salt. (Parmesan and Sardo have a lot of salt)
Instructions
- Blend all ingredients together just a couple of seconds.50 grams basil., ½ cup olive oil., 70 grams Parmigiano Reggiano cheese., 30 grams Sardo Cheese., 1 clove garlic., 15 grams pine nuts., 1 pinch Salt.
- We want a thick texture that is spreadable, so it is important not to exceed the amount of oil used.

Notes
- If you have, you can use a mortar instead of a blender. This option is a little better because the basil leaves are not burned and better flavor is extracted from them.
- You can replace pinenuts with pistachios and is lovely twist.
