Sweet Soup
Sweet potato, butternut squash, carrot and coriander soup.
Equipment
- 1 hand blender
Ingredients
- 2 sweet potatoes.
- 3 carrots.
- 1 butternut squash.
- 2 Onions.
- Salt.
- Pink pepper. (Optional).
- Olive oil.
- 1 bunch coriander.
- Vegetables broth.
- Butter.
- 1 bunch thyme.
Instructions
- Cut the onions in cubes.2 Onions.
- Cut butternut squash in half lengthwise.1 butternut squash.
- Cut sweet potato in half.2 sweet potatoes.
- Cut the tip and tails of the carrots.3 carrots.
- Roast everything in the oven at 180° for 45 minutes with a little butter and thyme.Butter., 1 bunch thyme.
- Saute the onions for five minutes with a splash of olive oil.Olive oil.
- Add carrots, sweet potato and squash and cook for one minute more at medium heat.Vegetables broth.
- Add vegetable broth and cook for ten minutes.
- Add coriander.1 bunch coriander.
- Blend the soup with a hand-blender until the desired consistency.
- Strain the soup.
- Enjoy!

Notes

- Optionally add pink pepper before adding the broth 🤤.
- You can also add a couple toasted butternut squash seeds.
- Don't add too much water before blend because later you are going to strain the soup. You can add more later after blending.
- A good option is to roast the vegetables on the grill with charcoal or firewood. It will have a smoky flavor. If you do not have that possibility or it is a lot of work you can add liquid smoke.
