Ingredients
  

  • 3 leeks.
  • 4 potatoes.
  • 1 onion.
  • 4 cups chicken broth.
  • 200 ml double cream.
  • 1 tbsp butter.
  • 1 splash olive oil.
  • Salt.
  • Pepper.

Instructions
 

  • Cut leeks in small pieces.

  • Cut potatoes in cubes.

  • Cut onion in cubes.
    Cut Onions
  • With olive oil and butter, saute the onion and leeks until soften and golden.
    Saute leeks with butter and oil
  • Add potatoes and saute for 10 minutes.

  • Add the chicken broth and cook for 10 minutes more.
    Add chicken broth
  • Blend everything with a handblender until reach a creamy texture.
    Blend Vichyssoise
  • Strain the soup.
    Strain Vichyssoise
  • Add the cream and mix well.
    Add cream
