Vichyssoise
Potato and leek soup.
Equipment
- 1 hand blender
Ingredients
- 3 leeks.
- 4 potatoes.
- 1 onion.
- 4 cups chicken broth.
- 200 ml double cream.
- 1 tbsp butter.
- 1 splash olive oil.
- Salt.
- Pepper.
Instructions
- Cut leeks in small pieces.
- Cut potatoes in cubes.
- Cut onion in cubes.
- With olive oil and butter, saute the onion and leeks until soften and golden.
- Add potatoes and saute for 10 minutes.
- Add the chicken broth and cook for 10 minutes more.
- Blend everything with a handblender until reach a creamy texture.
- Strain the soup.
- Add the cream and mix well.
- Enjoy!
