Gazpacho With Black Garlic
Another way to prepare Gazpacho.
Ingredients
- Tomatoes.
- ½ Green bell pepper.
- ½ Red bell peppers.
- Scallions.
- 1 clove white garlic.
- 1 clove black garlic.
- White wine vinegar.
- Balsamic vinegar.
- Cucumber.
- 1 slice bread.
- Olive oil. Extra virgin.
- Salt.
- 2 leaves mint
Instructions
- Remove the stem of the tomatoes and cut them into not very large pieces to blend them more easily.Tomatoes.
- Cut the bell peppers into pieces without their white part.½ Green bell pepper., ½ Red bell peppers.
- Cut the cucumber into small pieces.Cucumber.
- Add scallions en small pieces.Scallions.
- Add the black garlic and the white garlic.1 clove white garlic., 1 clove black garlic.
- Blend everything for a minute and add the bread and mint.1 slice bread.
- While blending add salt to tasteSalt.
- Add the two vinegars and the olive oil.White wine vinegar., Balsamic vinegar., Olive oil.
- Blend everything for several minutes.
- Strain.
- Let rest in the fridge until the next day (the flavors will be more concentrated).
- Enjoy!

Notes
If your blender does not blend the black garlic well, a good tip is to blend it with a hand blender together with the vinegar before adding it to the gazpacho in the blender.
Tip: Is much tastier if you leave it the following but is it important to stir the gazpacho before eat it.
